Where My Love for Food Began

My Passion for North Indian and Mughlai Flavors

North Indian and Mughlai cuisines have played a very important role in shaping my cooking style.

These cuisines are rich in technique. They require patience, control, and a strong understanding of ingredients. A good gravy is not rushed. A good kebab is not only about marination; it is about texture, heat, timing, and balance. A good tandoori dish depends on the right spice blend, the right temperature, and the right finish.

I enjoy working with flavors that feel bold but balanced. Creamy gravies, aromatic spices, smoky tandoor preparations, slow-cooked meats, paneer dishes, breads, and rice preparations all carry a sense of comfort and celebration.

For me, North Indian and Mughlai food are not only traditional cuisines. They are expressions of hospitality.

Progressive Indian cuisine, for me, does not mean changing Indian food completely. It means understanding tradition so well that we can present it with a fresh point of view.
